¼ cup Niçoise olives, pitted or not, or to taste
Note: You can use any black or green olives, or combine them.
1 (2-ounce) can or bottle Anchovies packed in Extra Virgin Olive Oil
Note: You will need the whole anchovy filet.
*FOR THE PISSALAT - ANCHOVY PASTE*
1 can / 106 g Sardines in Spring Water
1 can / 50 g Anchovy Filets In Extra Virgin Olive Oil
2 to 3 Clove stick
4 to 6 Fennel Seed, optional
Extra Virgin Olive Oil, enough to make the paste spreadable
*FOR THE FLAVOUR-INFUSED OLIVE OIL*
1 teaspoon Herb de Provence, dry
½ teaspoon Rosemary, dry
½ teaspoon Peppercorns, any color
1 large Bay Leaf
1 Garlic clove smashed or roughly chopped, or to taste
¼ cup of Extra Virgin Olive Oil
2 stems of fresh Thyme
*FOR THE DOUGH*
1½ teaspoons Active Dry Yeast
⅔ cup Warm Water
3 tablespoons Olive Oil
2 cups/250 grams All-Purpose Flour
1½ teaspoons Fine Sea Salt
