Mango Sago Pudding
Ingredients:
1/2 cup sago (tapioca pearls)
200 ml evaporated milk
1 cup fresh mango puree
1 liter water
Topping
Mangoes, cut into cubes.
Method:
1. Pour 1 liter of water in a saucepan and let it boil. Then chunk in the tapioca pearls to cook for 15 minutes or until they turn translucent.
2. Stir the mixture in interval to stop the pearls sticking together.
3. Strain the sago pearls and rinse them throughly to cool them of.
4. Drain the sago pearls and then add them into the evaporated milk and mix well.
5. Set aside a cup of diced mangoes for topping. Then blend the rest in a food chopper to make Mango puree.
6. Scoop the silky smooth puree in a serving glass, added the tapioca layer and top it with Mango cubes.
