Simple home made unagi sauce from only 5 ingredients. This sauce can be used to drizzle over your sushi pieces, and marinade/glaze seafood (eel) or veggies in Kobayashi style. Just a note that when reducing the sauce, remember to stir to prevent scorching. The sauce will be thicker after cooling down, so if it's too thick (over-simmering), you can always add some water and re-boil/reduce it again. Store in a bottle/jar in fridge after cooling down.
Ingredients:
1/2 cup soy sauce
1/2 cup mirin
4 Tbsps sugar
1/4 tsp dried hondashi
2 Tbsp sake
