INGREDIENTS
- 1 large ripe tomatoes, diced
- 1 onion, finely chopped
- 1 red bell pepper, diced (Optional)
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp chili flakes
- ½ tsp Salt or to taste
- ½ tsp black pepper or to taste
- 2 large eggs
- Thyme or Fresh parsley or cilantro, chopped (for garnish)
- Feta cheese (optional, for topping)
- Crusty bread or pita, for serving
INSTRUCTIONS
1. Heat the olive oil in a large skillet or frying pan over medium heat. Add the chopped onion and sauté until translucent.
2. Toss in the diced red bell pepper(optional) and minced garlic. Sauté for a few more minutes until the pepper softens.
3. Sprinkle in the chili flakes, salt, and pepper. Stir well to coat the vegetables with the spices.
4. Gently pour in the diced tomatoes, juices and all. Let the mixture simmer for about 10-15 minutes by adding some water until the tomatoes break down and the flavors meld into a rich sauce.
5. With the back of a spoon, make small wells in the tomato mixture. Crack the eggs into each well. This is where the magic happens!
6. Cover the skillet and let the eggs cook to your desired doneness. If you prefer runny yolks, it might take about 1-2 minutes.
7. Sprinkle freshly chopped parsley or cilantro over the eggs for a burst of freshness and color.
8. If you're a cheese lover, crumble some feta over the top - the creamy tanginess pairs perfectly with the rich tomato sauce.
