Russian pelmeni|Meat dumplings recipe|How to make Russian pelmeni|Pelmenirecipe|Пельмени
Pelmeni is one of the most favorite russian dishes in my family. Everyone loves them! Yes it takes time to make them but first of all they are truly delicious which already means it is worth the effort and secondly the recipe I will share let you make in between 100 and 120 pelmenis which means you will freeze a lot of them and will cook them at any time again when you feel like you don't want or have no time to cook today 😀.
Ingredients:
The dough
3 cups (450g) flour + more for dusting
1 egg
3 tablesboons oil
1/2 teaspoon salt
350 ml or 1 and 1/2 cups boiling water
(I recommend to add 250ml of water first as the quantity of water depends on the quality of flour you use and then slowly add the rest 100ml if needed)
Meat filling
8 ounces (200g) ground pork
8 ounces (200g) ground beef (you can use any type of minced meat you have at home, I love (as well as my kids) chicken ground meat in my pelmeni)
1 grated onion
2 pressed garlic cloves
1/2 teaspoon cumin
1/2 teaspoon pepper
1 teaspoon salt
1 teaspoon chilli
1/4 cup (60ml) water
Preparation:
1. Make the dough. Put all the ingredients together in a food processor and mix the dough until it forms. Knead it a little bit and let the dough rest for 30 minutes at room temperature.
2. While the dough is resting make the filling. You can get it done in advance, I usually make my filling the day before which I find very useful. Put together all the ingredients and mix well.
3. Cut the dough into 2 big parts and then you will want to cut each part into 4 more parts. I find it is more convenient to work with small amount of dough when you have to roll it into a thin layer.
4. Roll first part of the dough into a thin layer and cut little circles (the diameter of my circles is 2.5 inches or 6.5 cm).
5. Place a small amount (approximately 1/2 teaspoon) of meat in the center of the dough circle and shape pelmeni the way I show in the video. When each portion of pelmeni is done place them into a freezer and continue rolling the dough and shaping the pelmeni with all patrs of the dough.
6. By the time the last portion of your pelmemi is done the previously made pelmeni will be already frozen which is perfect so you can use them at any time you want.
7. Boil a litter or more water for 40 pelmeni (a regular portion of pelmeni is around 20) and generous amount of salt a couple of Bay leaves and a teaspoon oil. When the water starts boiling place your pelmeni in it and cook for 3-5 minutes over medium heat until they float to the surface and then let them cook over low heat for 2 more minutes.
8. Serve pelmeni with toppings of your choice. We love them with sourcream, with mix of sourcream and salsa, with mix of sourcream and soy sauce. We also love to grate some cheese over our pelmeni! Delicious
P.S. Keep your pelmeni in a freezer for later use. They can be stored frozen for several months. When you want to use your frozen pelmeni don't defrost them, cook them from frozen (put frozen pelmeni into boiling water)
