Many soup and stew recipes begin with a base of mirepoix, which is a mix of equal parts sautéed diced celery, carrot and onion. Save time later by prepping plenty of this soup and stew base well in advance. With a food processor, dice these veggies as uniformly as possible. To finish, all you have to do is heat some butter or oil in a saucepan over low heat and add the veggies to your pan, cooking just until they start to release their juices. Make batches of mirepoix now to freeze for later. If your freezer already contains homemade stock, premade mirepoix paired with some kind of meat or grain will make a simple and delicious last-minute meal.
