Many soup and stew recipes begin with a base of mirepoix, which is a mix of equal parts sautéed diced celery, carrot and onion. Save time later by prepping plenty of this soup and stew base well in advance. With a food processor, dice these veggies as uniformly as possible. To finish, all you have to do is heat some butter or oil in a saucepan over low heat and add the veggies to your pan, cooking just until they start to release their juices. Make batches of mirepoix now to freeze for later.
