Hello world, thanks for stopping by! Beginning of the quarantine (around April of 2020) I attempted to make my favorite kimchi called dongchimi (동치미). This kimchi is known for its crunchiness and mildness. This is a must for Korean barbeque or greasy food. This is one of few kimchis that is commonly made plant-based/vegan. I had fun making it. Eating them reminded me of my childhood. I highly recommend this to people who want to give kimchi a try, but afraid that common kimchi would be too spicy for them.
