Sorry for the blur. It goes away. :) Try this Enchilada Casserole! I've been making it for years and it's always a huge hit! Half the recipe for a smaller dish. This is great for Potlucks, Family Functions, Freezer Meals, etc. Enjoy! xo
RECIPE:
Ingredients:
19 oz can mild red Enchilada Sauce
26 oz can Cream of Mushroom Soup
3 lbs Ground Beef
1 Medium Yellow Onion
1 Cup sliced olives
2 lbs shredded Monterey Jack and Cheddar Cheese
12 fluffy medium sized flour tortillas
Pinch of salt
Preheat oven to 350
Brown Hamburger with diced onion in deep skillet season with a pinch of salt.
Whisk Enchilada Sauce and Cream of Mushroom Soup together
In large baking dish (I used an 18.x18 dish) begin layering in this order:
Sauce
Tortillas
Hamburger/Onion mixture
Cheese
Olives
Repeat process
Bake in 350 degree oven for 45 minutes.
Makes approx 12 large servings.
Recipe can be halved or quartered for smaller size
