Ingredients
► Chocolate Biscuit cake base
• 200g tea cookies
• 140g / 3/4cup semi sweet chocolate
• 140g/ 1/2cup + 3tbsp sugar
• 140g / 1/2cup + 2tbsp butter
► The Ganache
• 120g / 3/4cup dark chocolate
• 120g / 1/2cup whipping cream

The instructions
◇Step 1 Chocolate Biscuit Cake Base
1. Cut your cookies into small pieces
2. In a bowl, whisk room temperature butter and sugar for 5 minutes
3. Cut your chocolate into pieces
4. Microwave until everything is almost melted
5. Mix to help the last pieces to melt
6. Add the chocolate to the butter mixture
7. Whisk some more
8. Add the tea cookie pieces until they are all coated with the chocolate filling
9. Place parchment paper at the bottom of your 7 inch springform mold
10. Pour all your filling in the mold
11. Now you have a very uneven cake
12. Cover with a piece of parchment paper and use a flat glass to press down on the cake
13. You can now place the cake in the fridge for at least an hour
◇Step 2 The Ganache & Unmolding
1. Take the cake out of the fridge for 20 minutes
2. Use a torch to help the cake to detach from your mold
3. You can also pass a knife all around the cake
4. Doing both is the best option!
5. Unmold and place back in the fridge
6. Place the chocolate pieces and the cream into a bowl
7. Microwave 1minutes
8. Stir until the ganache is homogeneous and shiny
9. Let it cool down a little because you want it to be warm
10. Place your cake on a cooling rack
11. I like to place a clean baking tray under to collect the dripping ganache
12. Pour your ganache on the cake
13. Use a spatula to remove the excess ganache
14. Place on a cake board
15. Decorate as you like
16. We decided to make a powder of the cookies and coat the bottom!
◇Step 3 Cutting Slices
Cut and serve with a nice cup of tea!!!
