INGREDIENTS

1 tablespoon chia seeds
4 tbsp coffee*
1/4 cup (60g) peanut butter
1/2 cup (105g) melted coconut oil
1/2 cup (100 ml) almond milk
1 tsp vanilla extract

1 1/4 cup (130g) oat flour
3/4 cup (70g) cacao powder
1/2 tsp salt
2 cups (300 g) coconut sugar
2 oz (60g) vegan dark chocolate, chopped

Preheat the oven to 350°F (190°C). Line an 8x8in (20x20cm) baking dish with baking parchment.
In a small dish, combine the chia seeds and 4 tbsp coffee or water. Mix and leave on the side for 10 minutes to thicken up.
In a large bowl, whisk together the peanut butter, coconut oil, almond milk, vanilla, and thickened chia seeds until well combined.
Add coconut sugar, oat flour, cacao powder, and salt. Whisk to combine. Fold in the chopped chocolate using a rubber spatula.
Pour the mixture into the prepared pan and spread it evenly.
Bake for 20-25 minutes, until cooked through but still a little fudgy in the middle.
Allow the brownies to cool for about 45 minutes or until the bottom of the pan is barely warm. Then sprinkle with sea salt, slice, and enjoy!
