🍑PEACHES🍑‼️ Today was the day for canning and preserving some incredible peaches! 25lbs to be exact! But it’s always worth it! I can only fit so much into the reel but here’s the gist:

First I cut a small “x” on the bottom of the peaches after I washed them. This helps tremendously with peeling after you blanch! Cooked them in boiling water for 60 sec. then put them directly into some ice water. After they cool the skin slips right off.

I did the *hot pack method* for my peaches. So after I peeled them I sliced them up and added them to a hot pot of water and sugar (or syrup) for one minute! I then added them to my clean jars!

I packed peaches until there was a half inch head space then scoop some of the syrup into the jars until it is also at 1/2 inch head space.

Add your clean lids! ❕ALL of my @forjarsusa lids sealed ❕Use code JTHOMESTEAD for 10% off your order! Then place into your boiling water bath canner. Make sure the water goes OVER the lids and set your timer! Make sure to take into account your altitude! Because of my altitude I left them in my water bath canner for 35-40 minutes! Voila! I ended up with 12 pint jars and 6 quart jars!!

Food security has never been more serious. And I’m always thrilled to add fresh food to the larder for the long, dark days of winter. The peach skins made an EXCELLENT treat for my 🐓. While some of the scraps or bruised pieces will cooked down into peach JAM! Happy homesteading friends!!
