Everybody loves a good plate of curry goat and rice/roti!! Jamaica is known for providing some of the best curry goat/mutton recipes and today I'm showing you the easiest way to achieve that perfect, juicy and tender goat we all love so much.
Ingredients:
2 - 2 1/2 lbs goat/mutton
2 tbsp all-purpose seasoning
2 tbsp curry powder
1 small onion, chopped
2 stalk escallion
2 pegs garlic, minced
scotch bonnet pepper, as needed
8-10 pimento seeds
2 sprigs thyme
1 tbsp vegetable oil
1/2 thumb ginger, crushed
Vegetables (optional) Eg. Carrots, Irish, etc.
I prefer my curry goat without the veggies.
Direction:
-Add all ingredients (except Oil) to washed meat and mix thoroughly.
-Add oil to pressure pot and allow to heat up.
-Add meat with seasoning to pressure pot and cover on medium flame for about 10mins (stirring occassionally)
-Add enough hot water to meat to cover meat for pressuring
-Pressure for 35mins on med-high flame
-After pressuring, let simmer on low-med flame until desired consistency of the gravy is achieved
-Enjoy!
