High Protein Tuna and Bean Salad 💚👌
When I'm craving something quick and filling, this tuna and bean salad always hits the spot. It's fresh, loaded with flavor, and seriously so easy to throw together – perfect for those days when you need something fast but still want to eat well!
Ingredients (2 portions):
1 can of white beans
1 can of tuna (in olive oil)
1/2 cucumber
1/2 red onion
handful of fresh herbs (parsley and basil)
Dressing:
4 Tbsp olive oil
Juice of 1 lemon
1/2 tsp salt
1/4 tsp chili powder
pepper to taste
Directions:
1. Drain and thoroughly rinse the canned white beans under cold water. This helps to remove excess sodium and reduce the potential for gas.
2. In a large bowl, combine the drained beans, tuna (with its olive oil), diced cucumber, finely chopped red onion, and a handful of freshly chopped herbs (parsley and basil).
3. In a separate small bowl, whisk together the olive oil, lemon juice, salt, chili powder, and pepper to taste.
4. Pour the dressing over the salad ingredients and toss everything until well combined.
5. Serve optionally with a slice of toasted bread for a more filling meal. Enjoy 🫶
