MIRCHI PICKLE
Oil - ¼ cup
Asafoetida - ¼ tsp
Bhavnagri chillies - 8 to 10
Red chilli powder - 1 to 2 tbsp
Turmeric - 1 tsp
Coriander powder - 2 to 3 tbsp
Onion seeds - 2 tbsp
Gram flour - ½ tbsp
Lime juice - 1 whole lime
CARROT PICKLE
Carrots - 400 gms
Mustard seeds splits (Rai Kuria) - 2.5 tbsp
Fenugreek Seeds Splits (Methi Kuria) - 1 tbsp
Kashmiri Red Chilli Powder - 2.5 tsp (adjust according to taste)
Turmeric powder - 1 tsp
Fennel seeds - 1 tsp crushed
Salt - 2 tsp (adjust to taste)
Black Salt - 1 tsp
Asafoetida - 1/2 tsp
Oil - 1 cup
Vinegar - 1/4 cup
GARLIC PICKLE
Fenugreek seeds - 2 tbsp
Mustard seeds - 2 tbsp + 1 tsp
Sea salt - 1.5 tbsp
Tamarind - ¼ cup
Sesame oil - ¼ cup + 2 to 3 tbsp
Garlic - 1 cup
Asafoetida - ¼ tsp
Curry leaves - a few
Red chilli powder - 1 to 2 tbsp
