Braised Dried Oyster Fish Paste with Shiitake Mushroom ● Homemade Recipe
Ingredients:
300g fish paste
35g dried oyster
8 pieces Shiitake Mushroom
1 teaspoon minced Garlic, Shallot & Ginger
1 tablespoon Oil
½ tablespoon Dark Soy Sauce
½ tablespoon Light Soy Sauce
½ tablespoon Oyster Sauce
½ tablespoon Caster Sugar
1 teaspoon corn starch mix with 2 teaspoons water
Sauce thickening:
1 tablespoon corn starch mix with 2 tablespoon water
Steps:
Soak Dried Oyster and Shiitake Mushroom with hot water for at least 6 hours
(Or overnight)
Remove the dried oyster and keep the water
Coarsely chop the dried oyster
Remove the stem of the shiitake mushroom
In a big bowl, place the fish paste. Add the chopped dried oyster and corn starch mixtures
Mix well.
Take a spoonful of the fish paste mixture and roll into a ball (about 1 ½ inch in diameter)
Continue this until all fish paste finish.
Deep fried the fish paste ball until golden brown
Heat 1 tablespoon Oil in a pan. Sauté the minced garlic, shallot and ginger until fragrant.
Stir in the mushroom and fry for about 1 minute.
Add 1 cup of water (used to soak the dried oyster)
Bring to boil and add the fish paste.
Add dark soy sauce, oyster sauce and light soy sauce.
Close the lid and simmer for about 5 minutes
Add sugar, salt and pepper to taste
Slowly stir in the corn starch mixture until the sauce thicken.
