A hearty recipe using your pantry staples -- mujadara. My husband calls this dish the Middle Eastern equivalent of Red Beans & Rice.
This recipe has been adapted from a recipe posted in The New York Times by Melissa Clark.
Ingredients:
• Olive oil, bacon grease
• Thinly sliced onions, shallots or leeks 1 giant white onion
• 2 thinly sliced garlic cloves
• 1 teaspoon ground cumin
• 1/4 teaspoon ground allspice
• Pinch of cayenne pepper, thyme, oregano or rosemary
• Salt
• 5 cups broth or water
• 1 cup rinsed lentils (any kind)
