Named after Robert Whittle Dowling, owner of the hotel in the 1940s, Dowling's at the Carlyle menu features executive chef Sylvain Delpique’s interpretations of timeless New York favorites and throwback dishes from another era, with an emphasis on tableside preparations. The restaurant's Champagne Bar features a rotating assortment of Champagne by the glass in addition to specialty Champagne cocktails and hors d’oeuvres.
