FALAFEL 🥙
Light and crispy chickpea fritters, with a herby, spiced centre. Perfect in wraps, sharing platters, or just as an addictive snack!
With hummus last week, we obviously had to pair it with warm and crispy falafel. What a combo 😁.

Yield: 10-15 (depending on preferred size)
Soak time: Overnight
Prep time: 5 mins
Cook time: 5 mins
Ingredients:
200g (1 cup) Raw dried chickpeas
25g (1 cup) Chopped flat leaf parsley
15g (1/2 cup) Chopped coriander (cilantro)
2-3 Spring onions (chopped)
2-3 Cloves garlic
1 tsp Coriander powder
1 tsp Cumin powder
½ tsp Black pepper
½ tsp Paprika
½ tsp Cayenne
Salt to taste
1 tsp lemon zest
1 tbsp olive oil
Sesame seeds to sprinkle on.
Neutral oil to deep fry or 3 tbsp oil to pan fry
1. Soak dried chickpea in water overnight (2-3 times the amount of chickpeas).
2. Drain chickpeas and add food processor with garlic, parsley, coriander, cumin, pepper, paprika, cayenne, salt, lemon juice, zest and olive oil.
3. Pulse mixture 8-10 times till fully combined but not completely smooth.
4. Grab handfulls of the mixture and form into a squashed ball/patty shape. Place onto tray with greaseproof paper.
5. Sprinkle patties lightly with sesame seeds and gently press into patty.
6. Lower into medium-hot oil and fry for a few minutes till golden and crispy.
7. Enjoy :)
