Ingredients:
2 glasses of water (400 miligrams)
1 glass of freshly squeezed lemon juice (200 grams)
1 dessert spoon (10 grams) of cream of tartar (known by the formula KC4H5O6)
1 glass of (115 grams) starch
100 grams of hazelnuts
For sherbet:
4 glasses of water sugar
1.5 glasses of water
1 slice of lemon
To cover:
2 full tablespoons of powdered sugar
2 tablespoons of starch
Cream of tartar prevents sugar from crystallizing and acts as a leavening agent for baked goods, also known as potassium bitartrate. You can find it in grocery stores or herbalists.
