How to make Ashe Doogh (Turkish Yogurt Soup)
Ashe Doogh Ingredients
● Half of one small cabbage (which I chopped before into small pieces)
● 2 cups of cooked chickpeas (I soaked and cooked before because it
takes a long time)
● Half a cup of oats
● Half a cup of your favorite rice
● One 2 liter bottle of doogh, which is a Persian yogurt drink that you
can buy from any Iranian grocery store
● 2 cups of chopped greens, which include
○ Half a cup Italian parsley
○ Half a cup Parsley
○ And 1 cup of dill, which is the most important green in this soup
● 1 tablespoon of flour
● 1 egg,
○ For protein and also
○ which we use to avoid chunks forming in the soup because
otherwise, when you boil doogh, it might form chunks
● 1 whole hot pepper if you like spice
○ Otherwise, you can just use whole bell pepper, I use a green
one usually
● Cayenne pepper powder, to taste
