***The differences between Igbo style Yam Porridge and Asaro (Yoruba Style Yam Porridge)
1. The Yorubas use tomatoes in cooking Asaro.
2. In Asaro, the yams are squashed when done but this is a no-no in Igbo style yam porridge.
If you want to use dry fish in this meal, soak the fish then separate into small pieces. Add the fish at the beginning after pouring water into the yams.
Palm Oil
Add enough oil to give the meal a bright colour. If you don't want to use palm oil, then you can use tomato puree as is the case in Asaro.
When exactly should I add the ingredients?
Wait for the yam to boil then leave it to boil for about 5 minutes then add the ingredients.
Note:
Do not add salt at the beginning because it prevents the yam from forming a nice porridge. Salt seals the pores of the food and prevents it from softening.
