Explore Filipino cuisine at Cafe Via Mare. This restaurants has been serving Filipino food for ages. I was delighted to found out that the taste of their food never change. These are some of my fave.
* Beef tapa is a type of cured meat of thin slices of tender beef. A popular breakfast that is usually served with a sunny-side up egg and fried rice. This trio is then known as 'Tapsilog', that is short for Tapa, Sinangag (fried rice), Itlog (egg).
* Lumpiang Sariwa is another variety of Filipino spring rolls. It literally translates to Fresh Spring Rolls or fresh Lumpia. The filling is composed of various vegetables, some shrimps, and meat. Firm Tofu may also be added. The filling is then wrapped or rolled in a crepe-like wrapper. We call it fresh because you do not fry it as we do the other spring rolls, like Lumpiang Shanghai
* Kare Kare is a classic Filipino slow-cook stew, usually using oxtail and/or ox tripe, with deliciously thick deep yellow peanut sauce with some vegetables. It has a very subtle taste because it is traditionally unsalted, allowing the flavors of the peanut sauce and the meat to surface and be enjoyed. It is usually served with some shrimp paste to make up for the lacking saltiness in the stew itself.
* Mais con Yelo or Maíz con hielo could be a creamy, sweet and refreshing dish common within the Philippines. This dessert is created by admixture whole kernel corn, milk, sugar and clean-shaven ice. Mais con yelo is one the simplest summer treats and is really refreshing
