Veg. Grape leaves:
400g grape leaves
2 bunches parsley (washed and finely chopped)
2 onions finely diced
1 cup rice (i used Egyptian rice)
Few mint leaves finely chopped
3 large ripe tomatoes (finely diced)
3/4 cup oil
Juice of 2 lemons
1tbsp salt
Pinch of pepper /spice
2 potatoes cut into circles
— sprinkle the onions with the salt and pepper while u prepare the rest of the ingredients.
Add washed rice+ parsley+ tomatoes + mint+ onions+ oil+ lemon juice to a bowl and mix well.
Wash the grape leaves and place in boiling water for few seconds on each side. Then drain
Place sliced potatoes in the bottom of the pot then stuff and roll the grape leaves and place on top of the potatoes.
When you finish rolling, pour the rest of the liquid from the bowl into the pot, place a plate over the top and add 1 cup water to cover the rolled leaves. Cover the pot and place on medium heat till it boils. Lower the heat and simmer for an hour or so.
