Today we will show you how to make an old fashion Gingerbread Cake with lingonberry jam from scratch. A Favorite and sentimental swedish soft gingerbread cake that tastes like Christmas!

Mjuk pepparkaka med lingon" is the Swedish name of this beloved holiday cake recipe.
When grandma used to make this cake when I was little, I knew that my Christmas holidays had started. Sadly, she passed away a few years ago and I nevermore found her recipe. I have tried different recipes and this is the one that resembles my grandma's recipe the most. This is why this delicious moist gingerbread cake tastes like Christmas to me.
Recipe (use a Kitchen scale for more accurate measurements)
Ingredients
2 cups and 2 tablespoons (280g) of all-purpose flour
1 cup + 1 Tablespoon / 225 g cane sugar
1 and 1/2 teaspoon ground cinnamon
1 and 1/2 teaspoon ground clove
1 and 1/2 teaspoon ground ginger
1 and 1/2 teaspoon baking Soda
2/3 cup (150 g) of unsalted butter
2/3 cup (150 ml) of heavy cream
2/3 cup (150 ml) of milk
5 Tablespoons of light syrup (we used the Scandinavian brand Dansukker) but you can use Lyle's Golden Syrup that is easy to find outside Europe and is a good substitution for the Scandinavian light syrup.
3 tablespoons of lingonberry jam
For decorating:
3/4 cup and 3 tablespoons (100 g) of powdered sugar
1 and 1/2 tablespoon of water or milk
1 teaspoon of vanilla extract (Optional)
Topping
Fresh or frozen Lingonberries
powdered sugar for dusting
Directions:
Set oven to 175°C - 350°F
Grease and dust with flour or breadcrumbs a 9-inch bundt pan. Set aside.
Mix all dry ingredients in a bowl. Melt the butter. Stir in the butter and the rest of the ingredients. Don't whisk, just stir so everything mixes well. Pour the batter into the bundt pan.
Bake in the bottom of the oven for 45 -50 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before adding the sugar glaze.
When you are ready to serve the cake make the sugar Glaze
Sift the powdered sugar to remove any lumps.
Place the sifted sugar in a bowl and slowly stir in the milk/vanilla, a little at a time, to make a smooth, pourable glaze.
Time to decorate the cake!
Move the cake to a serving plate and dust it with some powdered sugar.
Transfer the sugar glaze into a piping bag or use a spoon to decorate the cake as we show you on the video or as you wish, then add some lingonberries.
