If you are looking for a recipe for a super easy and versatile keto sponge cake this one is for you:
Ingredients:
6 large eggs separated at room temperature
¾ cup keto friendly sweetener in powdered form
1 cup almond flour
1/2 tsp baking powder
¼ teaspoon cream of tartar
Pinch of salt
13 x 9-inch pan or 2 x 9” round pans (if you make a layer cake)
Directions:
Preheat Oven to 350˚F. Line bottoms 13 x 9-inch pan or 2 x 9” round pans with parchment paper (do not grease the sides).
Place egg whites and the cream of tartar in a stand mixer or use a hand mixer and start mixing on low speed until the whites turn opaque. Then start adding the powdered keto sweetener in small increments and gradually increase the speed of the mixer until the whites have formed soft peaks. Set aside.
In a separate bowl beat 6 yolks for about 1 minute on high speed.
Whisk together flour and the baking powder and then add into egg yolk. Fold with a spatula just until incorporated.
In small batches fold the egg whites carefully into the yolk and flour mixture.
Put the mixture into the baking pan and bake at 350˚F for 25 minutes or until top is golden brown.
