A Goan mixed veg curry which I used to enjoy during childhood for most of the Hindu festival.
Ingredients
Mix Vegetables of your choice
1 cup dried peas (soaked in water Overnight)
1 onion
1 tsp mustard
1/2 tsp turmeric powder
Pinch of hing
Salt to taste.
Oil
Water
Grind to paste with water ( first fry until light brown with oil)
1/2 onion
1 cup coconut
10 mapusa chillies
1 2” cinnamon stick
2 tsp corriander seeds
1/2 tsp cumin seed
10 peppercorn
4 cloves
1 blade of mace
First fry all the spices given above and aside to cool.
Than after cooling grind it to a medium paste with water.
Boil the overnight soaked peas in water with little salt.
Now heat oil in a pan than add mustard seeds when they splutter add onion and hing and sauté till soft . Than add turmeric powder and sauté for a min now add the ground paste and water passed through the jar .let it boil than add your veggies ( I used carrots,potato and cauliflower) now cover and cook till the veggies are half done .
Than add the boiled peas now cover and let it boil add hot water if more gravy needed check for salt
If needed. Cook untill all the vegetables are thoroughly cooked .
