-Potato 500g *(420g after peeling)
-Salt 5g (1tsp)
-Black pepper
-Corn flour / starch 50g (5tbsp)

Q: After the pre-cook (Chapter 2), what sort of texture should it be?

A: If the texture of the potato was like "al dente", it's still too tough. When you bite, it should immediately fall apart.


Q: Once it's ready to cook, can I store it in a fridge or freezer?

A: Not recommended
It catches the moisture in there, and become soggy.
Leave it at room temperature without covering until you cook.
Keep it dry is the key to success.
