LEMONGRASS SATE CHILI OIL
3/4 cup oil of choice, I used avocado oil
2 TBSP annatto seeds*
3.5 TBSP lemongrass, minced
1 shallot, minced
3 cloves garlic, minced
* do not over cook annatto seeds. Doing so will cause sate to be bitter. You can also skip the step of making your annatto seed oil. Doing this helps with the color. It does not add flavor. If you have another way to get red oil, you can do that =)
RED PEPPER FLAKES MIXTURE
3 TBSP red pepper flakes
1 TBSP water
2 TBSP fish sauce
2 TBSP sugar
1. Heat up 3/4 cup of oil.
2. Once oil is hot, add 2 TBSP annatto seeds and cook for 30 seconds.
3. After 30 seconds, remove annatto seeds from oil
4. Now that your oil is red, add lemongrass, shallots and garlic. Cook until fragrant
5. Once fragrant, add all of the ingredients listed under RED PEPPER FLAKES MIXTURE. Bring this back to a boil
6. Once boiling, reduce heat and simmer for 3-5 minutes. Your sate will slightly thicken up.
7. Now your lemongrass sate chili oil is done. Add 1/2 cup of this into your bun bo hue broth
