This recipe is so easy and delicious, you will be making it again and again. This spinach pie is a perfect snack, lunch or even breakfast option! 😋
Ingredients
Batter:
• 450g all- purpose flour
• 200g polenta /cornmeal
• 500 ml of water
• 50ml olive oil
• 1 tsp baking powder
• 1 tsp salt
• 2 tbsp chopped dill
• 1 tbsp balsamic vinegar or lemon juice
Filling:
• 700 g spinach, chopped
• 6 spring onions, chopped
• 50ml olive oil
• 2 tbsp dill chopped
• 2 tbsp mint chopped
• 1 tbsp balsamic vinegar or lemon juice
• Salt & pepper
Method:
Filling:
1. Sprinkle chopped spinach with salt, mix the ingredients and leave for 5-10min
2. Squeeze out the excess water from spinach and transfer into a bowl
3. Chop spring onions, mint and dill
4. Add olive oil and mix well
5. Add the salt and pepper
6. Grease a 34 x 24 cm baking tray
Batter:
1. Put the water in a bowl and add salt, oil, vinegar and dill.
2. Slowly add polenta and flour mix, stirring, until a thick paste is formed
3. Pour 3/4 of the mixture into the greased baking tray and spread it with a spoon so that it becomes a thin layer and goes everywhere
4. Spread the filling on top
5. Pour over with the rest of bater (1/4 of mixture)
6. Drizzle the top with vegetable oil
7. Bake in a well preheated oven at 180C for about 50min until golden
8. The Vegan pie is ready when it turns golden and the pie separates from the tray
