► Tomato relish is slow cooked tomatoes. You can use it with your burgers, hotdogs, sandwiches, between the slices of cheese or cured meat platter. You can even use it as pasta sauce or even a pizza base sauce. It will elevate your dishes in a very flavourful way. Try to get the juiciest and reddest tomatoes because they will have more natural sweetness. You can always experiment what is best for you.

► INGREDIENTS
1.5 kg of cherry tomatoes
2 medium brown onions
2 cloves of garlic
1/2 tsp chilli flakes
2 tsp mustard (or mustard powder)
1 tbsp salt (before cooking)
1 tsp salt (while cooking)
1 cup raw sugar
1 cup vinegar
2 tsp curry powder
