LUCKNOWI MUTTON MASALA RECIPE INGREDIENTS :
Mutton 750 gm
Yogurt ½ cup
Salt 1 ½ tsp
Ginger garlic paste 2tbsp
Green chili grounded 1 tbsp
Turmeric ½ tsp
Black pepper ½ tsp
Fennel seeds ground½ tsp
Cumin powder 1 tsp
Coriander powder 1 tsp
Allspice 1 tsp
Chili powder 1 ½ tsp
Nigella seeds ½ tsp
Coriander leaves chopped 3 tbsp
Whole spices mixed with 1 tbsp
Star anise 1
Flour 1 tsp
Wheat flour 1 tsp
Corn flour 1 tsp
Gram flour 1 tsp
Sliced green chili 2
Ginger julienne for garnish
Brown onion grounded ¾ cup
METHOD :
Marinate mutton with salt, ginger garlic, green chili paste, turmeric, black pepper, fennel powder, zeera, dhania, allspice, chili powder, coriander leaves, and kalonji, mix and leave it for 30 mins. In a bowl mix together the flour and 1 cup water to make a paste, keep it aside. Heat oil in a pressure cooker, add whole spices, and fry for 2 mins, marinated mutton, fry for 5 mins, add 2 cups water, pressure cook till done, open the cooker, remove some oil, and let it come on top. To the gravy, add the flour paste, brown onion crushed and 1 cup water for your desired gravy, cook for 5 mins.
TO SERVE: Remove in a bowl, drizzle some oil on top, garnish with ginger julienne, chopped coriander, mint and green chilies, and serve with tandoori roti or rice.
