Ingredients
2 large eggplants
Juice of 1 lemon small
6-7 Tbsp of Olive oil
1 tsp of smoked paprika
1 tsp of dried thyme
pinch of salt
black pepper optional
Tips
Roast at 350F for 25-30 minutes or until golden tops
Generously brush mixture on the wedges until it's all used up.
line baking tray with parchment paper
lay wedged skin side down
