100g 70% dark chocolate
Shredded coconut, toasted
Coconut mousse mixture

PINEAPPLE FLAMBÉ
Pineapple, cut to desired size
3 tablespoons sugar
3 tablespoons unsalted butter
1 teaspoon vanilla extract
2 tablespoons rum

COCONUT CAKE
3 eggs, yolks and whites separated
70g + 20g sugar
1/2 teaspoon vanilla extract
60ml whole milk
110g all-purpose flour
1.5g salt
3.5g baking powder
Coconut milk to soak
Toasted shredded coconut to coat the cake

PASSION FRUIT CURD
200g passion fruit puree, seedless
2 tablespoons sugar
2 whole eggs
2 teaspoons cornstarch
3 tablespoons unsalted butter

PIÑA COLADA
1 tablespoon rum, or more to taste
2 tablespoons coconut cream
3 tablespoons pineapple juice
A handful chunks of pineapple
A handful ice cubes made from coconut water

3 quả trứng, lòng đỏ và trắng tách riêng
70g + 20g đường
1/2 muỗng tea vani
60ml sữa nguyên kem
110g bột mì đa dụng
1.5g muối
3.5g baking powder
Nước cốt dừa để ngâm bánh
Cơm dừa rang để phủ bánh

MỨT CHANH DÂY
200g nước cốt chanh dây
2 muỗng table đường
2 quả trứng
2 muỗng tea bột bắp
3 muỗng table bơ lạt

COCKTAIL PINA COLADA
1 muỗng table rượu rum, hoặc theo khẩu vị
