RECIPES
**BREAKFAST MUG**
35g (⅓ Cup) Oat Flour
2 TBSP Date Syrup (or Maple)
2 TBSP Blended Peaches (or use unsweetened Apple Sauce)
½ TSP Bicarbonate of Soda
½ TSP Vanilla Essence
2-3 TBSP Frozen Blueberries
Any berries/banana for a topping.
METHOD
Mix everything together in a bowl.
Add to a microwavable mug or small ramekin/bowl.
Microwave for 2-3 mins. Simple!
****EASY ONE TRAY BAKE**
⅓ - ½ Queen Squash
2 medium Sweet potatoes
3 medium Carrots
1 Courgette (Zucchini)
1 Red Bell pepper
Maple Syrup
Garlic powder (to taste)
Onion powder (to taste)
Smoked paprika (to taste)
Salt & pepper (to taste)
DRESSING
1-2 TBSP Maple Syrup
1-2 TBSP Dijon Mustard
METHOD
Preheat oven to 200C/400F
Chop up all veggies into bite-sized pieces.
Add the carrots, sweet potatoes, and squash to a large oven tray.
Season well with garlic, onion powder, smoked paprika, salt, and pepper.
Roast for 45 minutes.
Add the remaining vegetables and mix through.
Roast for 15-30 minutes (depending on how well-done you like the veg!)
****Portobello Mushroom & Bean Bake***
4 large portobello mushrooms, stems removed
1 red onion, finely chopped
1 clove garlic minced
2-3 tbsp balsamic glaze/vinegar
2 handfuls spinach
400g cannellini beans
1 TSP mixed Italian herbs
2 TBSP oat flour
2 TBSP nutritional yeast plus more for topping
salt & pepper to taste
METHOD
Preheat oven to 180C/375F
Place mushroom caps top down on an oven sheet.
Brush the mushrooms with Balsamic
Bake in the oven for 10-15 minutes, until tender
In a large pan over medium heat, cook remaining mushroom caps, onion, and garlic until just caramelised, about 10-15 minutes
Add mixed herbs stir in the spinach. Add water or the juice from the mushrooms to wilt and cook.
Remove the onion and vegetable mixture from the heat, add the cannellini beans (drained) and the oat flour and nutritional yeast. Combine. Season with salt and pepper to taste. Sprinkle more Nutritional Yeast (optional).
Place the mushrooms in an oven-proof dish and cover with the mixture.
Bake for an additional 20-30 minutes, until heated throughout and just beginning to brown on top
