Leftover Mashed Potato recipe!!!
Polish Kitchen Style
Makes 50 small dumplings
Combine 1 cup taters, leftover mashed potatoes
1 egg
1 cup of flour into a dough.
Divide the dough into 4 equal parts. Roll out 1 part on a floured board to make a thin 'sausage' about 12" long, then cut into about ½" pieces.
Boil these for a full 8 minutes in well salted water, remove to a bowl and coat with some melted butter.
Repeat for all 4 portions. When cooled I then store one-meal portions in ziplock bags or vacuum seal and freeze for future use.
Once thawed I like to serve them sautéed in butter and plain or Italian seasoned bread crumbs what suit your tastes.
