Ingredients
3/4 cup butter, softened to room temperature
3/4 cup brown sugar
1/2 cup molasses
1 teaspoon vanilla powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground ginger
1/2 tablespoon ground cinnamon
3 1/2 cups flour
1 egg
How to make:
1. In a stand mixer with a paddle attachment, beat the butter for 1 minute on
medium speed until completely smooth and creamy.
2. Add the brown sugar and molasses and beat on medium high speed until
combined.
Scrape down the sides and bottom of the bowl if you need.
3. Beat in the egg
on high speed for 2 minutes.

In a separate bowl, whisk the flour, baking soda, ginger, vanilla powder, salt, and
cinnamon together until combined. On low speed, slowly mix into the wet
ingredients until combined. The cookie dough will be quite thick and
slightly sticky.
5. Divide dough in half and wrap each in plastic wrap. Press down to create
a disc shape. Refrigerate for at least 3 hours or overnight.
6. Preheat the oven to 350°F (175°C).

Remove 1 dough from refrigerator, flour a work surface, roll out the
dough until 1/4 inch thick. Cut into shapes. Place them 1 inch apart on a
baking sheet (preferably with silicone baking mat).
8. Repeat with remaining dough.
9. Bake cookies for about 8-10 minutes.
Keep in mind that the longer the cookies bake, the harder and crunchier
they’ll be.
10. Once cookies are completely cool, decorate as desired.
Cookies stay fresh at room temperature for up to 5 days, covered.
