Ingredients:
2 + 1/4 cups (500 g) cream cheese
1/4 cup (50 g) sugar
2/3 cup (150 g) heavy cream
6 tbsp (70 g) fine semolina
4 medium eggs
1 tsp (10 g) vanilla
1/4 tsp salt
Instructions:
1. Preheat the oven to 350 F (175 C). Line a bottom of a cake pan (7 inch) with a parchment paper and grease a sides, and set aside.
2. Separate egg yolks and egg whites.
3. Combine egg yolks and cream cheese, heavy cream, semolina and vanilla until combined and smooth.
4. In a separate bowl whisk egg whites, sugar and salt until soft peaks form. Add a half to the batter, stir with spatula until combined. Add another half and stir again until smooth.
5. Transfer to the cake pan. Spread evenly.
6. Bake for about 40-50 minutes depending on the size of your pan or until the center is no more jiggle. If it’s getting too brown on top, put a piece of foil (shiny side up!) on top and bake until done.
7. Allow to cool completely in the pan.
8. Dust with powdered sugar (optional).
9. This cake taste amazing at the next day.
