This easy recipe uses almond flour to create delicious crunchy gluten-free ginger cookies.
Preheat your oven to 180 C or 375 F.
You need:
2 1/2 cups almond flour
1/2 teaspoon baking soda
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon mixed spice or allspice
2 teaspoons ground ginger
1 tablespoon finely chopped fresh ginger
pinch of salt
4 tablespoons soft margarine or butter
3 tablespoons golden syrup
1 teaspoon vanilla extract
1 large egg
Mix everything together as in the video and bake for 12 minutes.
