TRANSCRIPT: Hi, this is Andy Cowan from Karate Rice. Today I'm going to be showing you how I cook white rice in my donabe.
Once I've got the rice washed, all I need to do is add it into the donabe. So today I'm cooking one cup of rice. That's a 180ml cup. And the amount of water I use is 1.2 times the amount of rice so this is just under 220 millilitres of water. And once we've got the water in there, just turn it on to a high heat. Then just bring it to a boil on a high heat. I leave the lid slightly off just so I can see what's going on.
It's been boiling away for about a minute now so I'll just turn the heat down and put the lid on completely and leave it like this for twelve minutes.
Once the rice has been cooking away on a low heat for twelve minutes, I just turn the heat off and then let it stand for another fifteen to twenty minutes or so and it should be ready.
The rice has been steaming away for about eighteen minutes now so let's just take a look. I'll just fluff it up. As you can see there's a little bit that's kind of burnt at the bottom. It's supposed to do that. Japanese call that 'okoge'. And that's one of the reasons I like using a donabe sometimes just to have different textures in my rice. Thanks.
