Pie Shell:
2 Cups of Frankie's All Purpose Flour (purchased at: www.glutenfreefrankies.com)
142grams (5oz.) cold butter (cubed)
1/4 tsp salt
2 eggs
3/4 cup white sugar.
Roasted pumpkin:
Slice a sugar pumpkin (or also known as a pie pumpkin) in half. Clean it and then place cut side down and roast in preheated 425F/218C oven for 40 minutes, or until a fork can pierce the skin and the insides feel soft.

Filling:
2 Lg eggs
1/2 cup packed brown sugar
1/3 white sugar
1/2 tsp salt
2 tsp cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/8 tsp ground cardamon
1/2 tsp lemon zest
2 cups pumpkin puree
1 1/2 cups cream ( I used 10% cream in the video and it worked great!)
