Ingredients:
Rice Flour - 1 and 1/2 Cups
Roasted Bengal Gram Flour (Putani Pudi) - 1/2 Cup
Jeera or Cumin Seeds - 1 tsp
Jeera Powder or Cumin Powder - 1tsp
Hing / Asafoetida - 2 Pinch
Red Chilli Powder - 1 tsp (I have used 1/2 Kashmiri Red Chilli Powder and 1/2 tsp MTR Chilli Powder)
Salt - 1 and 1/4 tsp
Ghee - 3 Tbsp
Oil - For deep frying
Method:
1. Add 1 and 1/2 Cups of Rice Flour to a pan. In low flame, roast the Rice Flour for 2-3 minutes and then switch off the flame. In the heated pan continue to fry Rice Flour for 2-3 more minutes.
2. To the same heated pan, add 1/2 Cup of Roasted Bengal Gram Flour and mix well with the Rice Flour. This should make the flour mixture turn warm.
3. Transfer the flour mixture to a mixing bowl. Now add 1 tsp Jeera or Cumin Seeds, 1 tsp Red Chilli Powder and mix once.
4. Now add 1 tsp Jeera Powder or Cumin Powder, 1 and 1/4 tsp Salt and 2 pinches of Hing and mix well.
5. Now add 3 Tbsp Ghee and mix everything well with the help of your hand. Ghee should be mixed well with all the ingredients. If you hold tightly in the palm, the flour should hold shape as in the video and break easily. This consistency is very important for a nice crispy Chakli.
6. Now add water slowly to the flour mixture and prepare soft dough. It may take 3/4 Cup to 1 Cup of water to prepare dough. Knead the Chakli dough well. If not kneaded throughly, the Chakli may break when frying in oil.
Also water proportion is very important. Ensure excess water is not added when preparing dough. If excess water is added, the Chakli will break and may absorb more oil while frying. If you find the water quantity to be more than needed and dough is too soft, then slightly roast a little Rice Flour and add to the dough and knead it once again. Cover the dough with the plate; do not allow dough to become dry.
7. Now take a Chakli press and fix the Chakli plate. Grease the Chakli press with little Oil. Now take a portion of prepared Chakli dough and knead it once and transfer to Chakli press. On a plastic Sheet or on butter paper, press the dough to the Chakli shape for about 4-5 Chakli at once. Do NOT make press more and keep ready, since it will make the same turn dry.
8. Heat Oil for deep frying. Once the Oil is hot, slowly drop the 3-4 Chakli one by one to the Oil and deep fry them in medium flame. Do not fry more than 4-5 Chakli at a time since it may also break. Also, do not flip Chakli immediately after dropping them in Oil. Let it fry one side for about 2 minutes and then flip one by one and fry till the other side till done.
Once done, remove the Chakli from oil and transfer to a strainer to drip excess oil.
Now Chakli is ready. The above measurement will yield 25-30 Chakli. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.
