Ingredients:
1 cup butter, soften
1 1/2 cup brown sugar
1 egg
3 tablespoon raw unsalted almonds, finely chopped
2 cups all purpose flour
1 teaspoon baking powder
2 teaspoon cinnamon powder
3 teaspoon ginger powder
1/2 teaspoon nutmeg powder
1 teaspoon vanilla extract
Instructions:
1- In a medium sized bowl, combine sugar and butter. Add egg and vanilla extract, mix well.
2- In a different bowl sift flour, baking powder, cinnamon, ginger and nutmeg.
3- Add half of the dry ingredients mix to wet ingredients. Mix until combined. Add the other half and knead for 2-3 minutes or until fully combined.
4- Wrap the cookie dough with plastic wrap and store in the fridge for 20 minutes.
5- Preheat oven to 350˚F (180˚C) and line a baking sheet with parchment paper; set aside.
6- Roll out dough to ⅛ of an inch on a lightly floured surface. Cut into desired shapes with a cookie cutter. Transfer to parchment-covered baking sheets. If the dough gets warm chill the cookies in the refrigerator for 5 minutes before bake them.
7-Bake for 10-12 minutes, or until the cookies are crisp around the edges and on top. Remove from oven and let cool for 5 minutes, then transfer to a wire rack to finish cooling.
Once the cookies are room temperature, feel free to decorate them as desired with the icing
