Top Chef Season 4 winner Stephanie Izard uses a Microplane to prepare garlic and ginger for cooking, not a knife. It's much easier to get a fine mince (ban the chunks), plus its quicker.

When it comes to mincing ginger and garlic I don't even use a knife. I actually use a micro plane because who wants a big old piece of ginger in their mouth. This way, comes out all nice and small and uniform. You don't have to worry about it.
