Early spring is a great time to get out and snag some Spoonbill (Paddlefish). Many people who have never tried it are surprised that it doesn't take like fish. Here is how to cook Paddlefish. This is my favorite recipe for Spoonbill. It's easy to prepare and to cook. But you do need to plan ahead. I rarely ever freeze my spoonbill. I will generally cook it the day after I catch it.
I don't really care for paddlefish fried like other fish. Especially when it's fried in the same oil to cook other fish! Yuck! But this recipe right here is the best for paddlefish in my opinion.
Prepare your paddlefish the evening before by drying them off and putting them in a bowl and covering it with plastic wrap. Then about 30 to 45 minutes before you plan on cooking them, you take them out of the fridge and let them come up to temp.
While the fish fillets are coming up to temp, I get the grill ready. I prefer hickory, but any wood will do
