INGREDIENTS
Pork ribs (2 pounds)
3 Cloves
2 Bay leaves
3 Chile Guajillo
1-2 tomatoes
4 Chile de arbol
3 Garlics
1/2 red bell pepper
1 Onion
1 1/2 spoon of sea salt
1 spoon Pepper
1 spoon paprika
3-4 cups of water
Wash pork and Pat dry
Drizzle oil,
Add bay leaves (2)
Add Cloves (3)
Add Pork and fry for 35 minutes
(Stir every few minutes)
Chop
Chile Guajillo (3)
Chile de arbol (4)
Garlic (3)
Tomatoes (1-2)
Onion (1)
1/2 red bell pepper
2 cups of water
Drizzle oil on to pot
Add onions, garlic and cook for 2 mininutes before adding tomatoes and chili’s ( cook for 20 minutes
till soft)
After 20 minutes add tomatoes Chili’s and garlic to a blender
along with
1 1/2 spoon of seal salt
1 spoon of paprika
1 spoon of pepper
2 cups of water
Once ribs have cooked for about 35 minutes and have a nice crisp on all sides cooked thru (no blood) add sauce, 1-2 cups of water and Cook for 1 hour 20 minutes or till tender. (Low heat)
