Start by soaking one cup of green moong dal in water for about six hours. This is the key to achieving that smooth batter. After soaking, drain the dal and transfer it to a blender. Add a small piece of ginger, a green chili, and a handful of fresh coriander leaves for that burst of flavor.
Blend everything together until you have a smooth, thick batter. If needed, add a little water to help it along. Now, let’s add some salt to taste. Mix it well and set it aside.
Heat a non-stick pan or a cast-iron skillet over medium heat. Once hot, pour a ladleful of the batter and spread it into a circular shape. Drizzle a little oil around the edges to crisp it up. Cook until the edges turn golden brown.
Now, flip it over and cook for another minute. Your Pesarattu is ready! Serve it hot with some coconut chutney or ginger chutney for an authentic experience.
