One of the latest advancements in food tech is targeting 'flexitarians' who aim to reduce their meat intake. i24NEWS speaks with the founder and CEO of Mush Foods, Shalom Daniel, about their hybrid meat products made with mycelium.
"We are trying to bring a new approach to the market because as I told you - and as you told me - most of the population are not vegan, and they are not going to be," he told i24NEWS.
"We as human beings have never in history changed our habits so dramatically - from white to black - only because we want to save the planet or the animals so we think that if we can help people, the flexitarians, who want to reduce their meat consumption but do not go all the way to become a vegan," he continued.
