Ingredients:

2-3 tbsp olive oil
4-5 cloves of garlic minced
2 medium size onions chopped
2 tbsp celery chopped
2 carrots chopped
1/4 cup collard greens stems chopped (optional)
2 tsp cumin seeds
3 bay leaves
1 tsp turmeric powder
1 tsp red chili powder
1 tsp smoked or sweet paprika
1 tsp cinnamon powder
1 tsp ginger powder or paste
1/2 tsp black pepper
2 tsp salt or as required
2 medium size sweet potatoes chopped
3 cups boiled chickpeas
1/4 cup tomato paste
4-5 cups of water or as required
3 cups chopped greens of your choice, i.e rainbow chard, collard greens or spinach
2 tbsp cilantro chopped etc.

Notes:
1. You can serve the chickpea Stew with rice, quinoa, bread rolls or any flat bread of your choice.
2. You can substitute the sweet potatoes with turnip, squash, potatoes and much more.
3. You can substitute chickpeas with lentils or black bean. Be creative !
