Lemon wine is an introduction to brewing that involves very simple steps that make something very appealing and tasty. You can make lemon wine taste vary to your preference by adding other herbs, spices and more. While technically not a wine as it is not using the juice of lemons to ferment it is a colloquial name given to this kind of fermentation.
Ingredients:
roughly 8 to 10 lemons or 2 kilograms.
4 litres of water.
Between 1.5 and 2 kilograms of sugar depending on how dry you would like this to be.
Yeast
Equipment:
Large jar able to hold about 5 litres such as a demijohn.
Strainer.
Knife
Zester or grater for the lemons
Juicer.
Method:
Boil your lemon slices, lemon juice, sugar, other flavourings in the water for 15-20 minutes.
Let this cool to about 30 degrees Celsius (86 degrees faintheart).
Pour it into your large jar.
Add your yeast and mix together.
The fermentation will take up to 3 weeks for the fermentation.
Rack this for another 2-3 weeks.
Store for at least 6 months in individual bottles.
Enjoy your lemon wine.
There are some variations you can make to this approach. The use of whole lemon parts in the fermenter is possible. That is if you use a wide mouth jar.
The wide mouth jar both fits the lemon and it can be removed later with ease. A narrow mouth jar or similar does not allow for this.
Another variation is the use of other flavours. This includes cloves, star anise, raisins and more. These can add more complexity to your lemon wine. You just need to be cautious with which ingredients you use.
