Ingredients:
2 cups of flour
1 tablespoon of sugar
1/4 teaspoon of salt
2 tablespoons of cold, cubed butter
1/2 cup of red or white wine
1 egg white (for sealing the dough)
1 liter of vegetable oil (for frying)
1 cup of ricotta cheese
1/2 cup of powdered sugar
1/4 teaspoon of vanilla extract
1/4 cup of chocolate chips
Powdered sugar (for dusting)
Instructions:
In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the dry ingredients are crumbly.
Slowly pour in the wine and knead the dough. The dough should be firm and smooth. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Remove the dough from the refrigerator and roll it out to a thickness of about 5 mm. Use a round cookie cutter or a glass to cut out circles from the dough.
Gently squeeze and shape each round dough into a cone, brushing the edges with egg white to seal them.
In a deep pot, heat the vegetable oil over medium-high heat. Place the cannoli shells into the pot and fry for about 2-3 minutes until golden brown. Use a slotted spoon or tongs to remove the cannoli shells from the oil and place them on a paper towel to remove excess oil.
To prepare the filling, mix the ricotta cheese, powdered sugar, and vanilla extract in a bowl. Add the chocolate chips and stir well.
Fill a piping bag or use a spoon to fill the cooled cannoli shells with the prepared mixture.
Dust the cannoli with powdered sugar before serving. Enjoy!
